Healthy Peanut Butter Cookie Dough Blizzard

*How to say this without hurting my kid's feelings...*

This is the best thing I have ever created - with my hands. Bar none. 

​

They say desperation breeds creativity. In this case, I blame the mass extinction of the T-ball game, Dairy Queen, Block-Buster Friday night trifecta.

 

Lets be real fam. Regardless of how you feel about the (less than chill) dairy industry - there was no better way to spend a summer night back in the day. 

​

And I'm grown now - sure, but I still like joy. I'm allowed to dig bliss. I'm entitled to gooey, cookie-dough laiden desserts as I sift through power bills and jury-duty notices.

​

So shout out to finding happiness in the little things these days. May we drown our to-do lists into peanut buttery oblivion and gain some nourishment & nostalgia along the way.

The 90's would be proud, little slugger. Big finish out there.

Total time: 20 min

Makes 1-2 Blizzards

Ingredients:

  • 2 ripe/spotty bananas (peeled and frozen)

  • 2/3 cup rolled oats

  • 2 Tbsp natural peanut butter

  • 1 scoop plant-based vanilla protein powder (don't omit! This acts as our sweetener as well)

  • 3/4-1 cup plant milk (oat, soy, almond, etc.)

  • 1 Tbsp dark chocolate chunks/chips

  • 3-4 homemade No-Bake Peanut Butter Cookie Dough Bites, recipe linked here

Directions:

Place all ingredients except for the cookie dough bites into a blender and blend until a thick & creamy milkshake texture forms. 

​

For each blizzard, break apart 3-4 cookie dough bites into small doughy pieces and layer them into a jar, alternating between pouring some of the blizzard, adding in some cookie dough chunks, and so on - until all of the blizzard base has been used up. 

​

Grab a spoon & devour like is 1997 in these streets.
