Oat Milk Yogurt Parfait

When I first went plant-based, the biggest casualty in my mind was my go-to weekday breakfast - a Greek yogurt parfait. 

​

I searched far and wide for a non-dairy yogurt that could step up to the plate - but every one I encountered seemed to be high in sugar, overly rich in fat & largely devoid of protein altogether. Until, now.

 

Oat-milk based, free of gelatins or pectins, rich in billions of live probiotics and 8 grams of protein + just around 100 calories for a whopping 1-cup serving...this Nancy's Organic stuff is the real deal (not sponsored, I promise!).

I love buying plain yogurt and sweetening it up myself. Fresh berries, homemade granola and Crofter's refined-sugar-free organic fruit spread are my go-to's for a touch of mild sweetness. 

​

Plus, added hemp hearts for an extra kick of protein and omega-3 fatty acids.

Makes: 1 serving

Ingredients:

  • 1 cup Nancy's Probiotic Oatmilk Yogurt (plain/unsweetened - or vanilla if desired)

  • 1 Tbsp Crofters Organic Strawberry Fruit Spread

  • 1/2 cup fresh sliced strawberries

  • 1/2 cup fresh blueberries

  • 1/2 cup muesli or low-sugar granola (store-bought or my homemade Cinnamon Crunch Granola)

  • 1.5 Tbsp hemp hearts

Directions:

Begin by sprinkling a bit of granola into a glass bowl or jar. Fold in 1/4 cup of yogurt on top of the granola, and 1 tsp of the strawberry jam on top of the yogurt.

Next, add in 1/4 cup of sliced strawberries and 1/4 cup of blueberries. 

​

Continue to layer on more granola, yogurt, fruit spread, and berries until all have been used up. Top with a bit more granola, and the hemp hearts.
