Low-Glycemic Cucumber Mint Gimlet
One day my girlfriend and I were swapping horror stories about our feral children, dusty homes & bottomless laundry hampers and it hit us: We need a drink.

But as any woman that's shoved a tiny human out of their nether-region knows, our bodies look for any excuse to bloat these days. And alcohol happens to be one of their favorites.
​
Enter, the Low-Glycemic Cucumber Mint Gimlet. No-added-sugar vodka, soda water, lime juice, muddled mint & fresh cucumber slices - it's basically a salad in a cocktail as far as my graduate degree is concerned.
​
With flavonoid antioxidants in the cucumber proven to reduce swelling, and fresh mint - known to help relax the GI muscles and ease discomfort - finally, a friend with bennies in the mixed drink department.
​
So hats off to you, desperation, for breeding creativity.

Makes: 2 drinks
Ingredients:

6 cucumber slices
-
4 oz. Kettle One no-sugar Cucumber Mint Vodka

6 oz. lime-flavored sparkling water
-
1/2 fresh lime
-
fresh mint leaves
Optional: a splash of Swoon zero-sugar monkfruit simple syrup, to taste
Directions:
Fill two 8 oz. glasses full of ice and place 3 cucumber slices in each glass.

Add 2 oz. of cold cucumber mint vodka to each glass and top off with sparkling water.
​
Squeeze a little lime juice in each cocktail & stir. Taste, and add a splash of simple syrup if desired.
​
Garnish with a sprig of fresh mint leaves & ENJOY!

This recipe goes best with an appetizer like my Spicy Buffalo Cauliflower Wings or Healthiest Ever Loaded Vegan Nachos, but don't take my word for it!
