Chocolate Chip Sunbutter
Cookie Dough Bites
This recipe was born out of my love affair with sunflower butter, and also my lack of motivation to clean my food processor.

I LOVE cookie dough bites. But realizing my other two recipes, (Oatmeal Raisin Cookie Dough Bites & Peanut Butter Cookie Dough Bites) both require food processors was a rude awakening.

Today marks the end of the madness, friends. Just a single bowl, 10 minutes, and a one-way ticket to sweet n' salty Vitamin E-packed perfection.

Alexa, queue up the Beatles, Abbey Road.
Here comes the sun, baby.
Total time: 10 min
Makes: 10 Bites
Ingredients:

1/2 cup sunflower butter
-
3 Tbsp maple syrup
-
1/2 cup blanched almond flour
-
1/2 cup rolled oats
-
1 tsp vanilla extract
-
1/3 cup dark chocolate chunks or chips
-
pinch of salt (if sunflower butter not already salted)
Directions:
Begin my stirring together the sunflower butter and maple syrup in a medium-sized bowl.
​
Then add in the almond flour, oats, vanilla and sea salt (if needed), and mix until a thick dough forms.
​
Finally, fold in the dark chocolate chunks and roll into about 10 large bites.
​
